My dear friends you are looking at a Nutella filled banana cookie from the newest artisan bakery in south Austin ThoroughBread and OH MY GOSH GO GET ONE.

Fine. I’ll talk about the place a little more.
ThoroughBread is the brick and mortar location for self-taught baker Ryan Goebel. After falling in love with baking, Ryan started a bread delivery service that eventually became so popular that the next step became a storefront in South Austin.
I sincerely didn’t realize there was going to be anything but loaves of bread when I stopped in. By the time I got there in the afternoon they had already sold out of most of their bread options. Fortunately for me I learned they also make cookies. Just as fortunate for me. they had plenty of cookies left. That to me sounds like a fair trade.
These cookies are an amazing blend of bread and cookie. It feels like I’m eating bread but it’s clearly a cookie. My brain is still trying to decipher how it all works.
I tried the chocolate chip cookie first because that’s the gold-standard. This is one of those huge cookies that you see everywhere, but this one feels better than most. I prefer my cookies cooked all the way through and most of the huge cookies on trend now struggle with that. Most other places give you a nice brown outside, but the inside is very much like cookie dough. Sure, I understand the love many people have for cookie dough. I personally prefer my cookies to be, well, cooked. Give me a cookie with a crisp outside and a soft, chewy inside and I’m sold.
That’s what I got here. ThoroughBread has nailed the sweet spot. Even more so with their stellar banana Nutella cookie.
It feels like I’m eating a tiny loaf of banana bread. It’s comfort food in cookie form. The crisp outside opens up to a soft, moist crumb inside. It’s got enough banana flavor to make you want more without being overdone. Plus the swath of Nutella in the center add a rich creaminess that makes this a must try item.
I’ll eventually get some bread from ThoroughBread, but you can bet that I’ll be back for more cookies. If you stop in, which you should, try one for yourself. If you don’t try the banana Nutella cookie then you’re doing it wrong.
Unless you’re allergic to bananas or Nutella and then you do you.
